Using only PB2 (a powdered peanut butter) and cocoa powder and very few wet ingredients these brownies come out very cake like but so so delicious. Especially if you are generous with the chocolate chips. 🙂
1 large egg (or chia egg equivalent if keeping this vegan which is 1 tbsp of chia seeds mixed with 3 tbsp of water. Let that sit for a few minutes until gummy)
1 cup PB2
1/2 cup cocoa powder
1 tsp baking soda
1/4 tsp salt (I used Himalayan sea salt)
1/2 cup plus 1 tbsp water
1/2 cup coconut palm sugar
1 tsp vanilla
3/4 cup cocolate chips (I used a dairy/nut/soy free brand)
- Preheat your oven to 325 and grease a 9×9 baking pan.
- Mix all your dry ingredients together then add in the egg, water and vanilla. Fold in the chocolate chips and pour into prepared baking pan. Bake for 30 minutes.
