Cinnamon Crunch Granola

I originally intended to make a homemade granola cereal. And that is exactly how I served it for breakfast the morning I made this. I soon found out that not only is it delicious as a cereal but it tastes just as good sprinkled over a bowl of yogurt and fruit.


Either way, you are going to LOVE this!

2 cups of gluten free oatmeal

4 tsp cinnamon

1/4 tsp Himalayan sea salt

1 tsp vanilla extract

4 tbsp maple syrup

1/4 cup hemp seeds

1/2 cup chia seeds, ground (I grind mine in my high power blender)**

2 tbsp flax seeds, ground (I grind mine in my high power blender)**

  1. Preheat oven to 325.
  2. In a large bowl add the oats, 3 tsp cinnamon and salt and mix that together well. Then add the vanilla and syrup. Coat the oats with the syrup. Place on large rimmed baking sheet and bake for 20 minutes.
  3. When you remove oats from the oven, transfer back to your bowl and add remaining 1 tsp of cinnamon, chia, and flax. Stir well. You could add more cinnamon to your desired taste.

** I grind at least a cup at a time and keep in a tightly sealed glass container to have on hand for recipes as needed. Sometimes I use the whole seed as is, and sometimes I like it ground up, so it is just easier for me to have some already ground and set aside. **
